
Coconut Christmas Cookies

Ingredients:

150g softened butter (not melted)

85g of AYAM ™ organic coconut sugar

1 egg
-
1 tablespoon of AYAM ™ Organic coconut milk

1 pinch of salt
-
1 teaspoon ground cinnamon
-
50g grated coconut
-
180g of flour

Optional: dark chocolate dessert for decoration
Preparation:

Beat the softened butter and coconut sugar with an electric mixer or a food processor for a few seconds. Add the egg and beat again, less strongly.

Then add the coconut milk, salt, grated coconut and cinnamon and mix with a spatula.

Add the flour and incorporate it first with a spatula then finish by hand until the dough is perfectly homogeneous. Wrap the dough in cling film and put it in the fridge for 1 hour.

Heat the oven to 180 °. Cut the dough in half, flour the work surface, roll out one half on about 0,5cm thick and shape the cookies with cookie cutters then place the cookies on a baking sheet covered with baking paper. Repeat with the other half of the dough.

Bake for 8-9min: the edges must be golden.

Let cool a little, then if desired, add melted chocolate details and a little grated coconut on top. Taste!
