Vegetable & Chicken Curry

Ingredients:
- 1 red bell pepper
- 3 carrots
- 2 onions
- 2 courgettes
- 2 garlic cloves
- 1 sweet potato
- 330ml of AYAM ™ coconut cream
- 1 tablespoon of AYAM ™ curry paste
- fresh coriander
- Salt pepper
- 3 tablespoon rapeseed or peanut oil
- 1 large chicken cutlet or 2 small
Preparation:

Peel and cut the vegetables: carrots, zucchini and sweet potato in cubes, pepper and onions in strips, garlic in very small.

Cut the chicken cutlet into pieces. Reserve it.

In a wok, heat some oil. Cook the carrots and peppers for 3 minutes, then add the zucchini and sweet potato. Also add the onions. Stir regularly so that the onions do not burn. Cook for 10 minutes.

In the wok, add the garlic to the vegetables. When the vegetables are almost cooked, add the minced chicken. Cook it.

Then add the coconut milk previously mixed with the curry paste. Mix well.

Adjust the seasoning. Before serving, add chopped coriander and enjoy hot.
